Flinty Red invites you to a supper celebrating the food and wine of Spain's capital of Seafood, Galicia. With a 1,500 km of coastline and a massive fishing fleet of over 5,200 vessels, Galician food loves a fish or two.
For the Spanish, Galician food pays particular reverence to shellfish. It's not for nothing that long ago Galician pilgrims are represented by the scallop shell. Special regard is also held for octopus, and the many riffs on cooking this fleshy mollusc are endlessly inventive. Fat of the land, Galician style, is not too dissimilar from the U.K. Cold and damp weather prevails with potatoes, cabbages and apples the favoured crops.
Never has there been a greater time to indulge in the wines of Galicia.
Alongside the long famed Albarino grape, we are now seeing the likes of Godello, Treixadura, Mencia and Brencellao to name a few. All native to Galicia, with very few grown in other parts of Spain let alone the rest of the world. The marriage of modern winemaking techniques alongside tradition makes the wines of Galicia both superb and distinct.

Fontodi Dinner, Tuesday 25th June 2013

It is our pleasure to have Fontodi here to host this tasting.
Located in the heart of Chianti Classico, the Fontodi estate is a family run winery since 1968.
With vineyards located in an area known as 'Conca d'Oro' (Golden Shell) as they are shaped like an amphitheatre with a southerly aspect.
Fontodi is a fully certified organic estate with principles based on respect of nature and sustainability. Following this idea they utilise the indigenous Chianina cattle to naturally fertilise the vineyards. All the grapes are harvested and sorted by hand to ensure the highest quality. They combine these traditional methods with a newly built state of the art winery with a gravity fed system and new underground cellars.
The wines they produce are a reflection on their estate, encompassing traditional Chiantis in 3 styles, modern Syrah and classically made Vin Santo. Not forgetting their fantastic olive oil which we use in the Flinty kitchen.
We will be matching wines throughout the evening and cooking a classically Tuscan inspired dinner.
